Tip of the day - Sodium bicarbonate

Hey! Do you know that you can tenderize your tough meat (beef or pork) by marinating with sodium bicarbonate flour? It was shared by an expert who is involved in food business. They needed to make lean meat less tough, but at the same time wants to satisfy their customers' healthy diet's needs. So to make the best of both world, some chefs would add sodium bicarbonate to soften the meat.
